Zesty Lemon Cake

2 Pkg Unsweetened Lemonade Drink Mix

1 Cup Water

1 White/Yellow or Lemon Cake Mix

3 Eggs

1/3 Cup Vegetable Oil

Zest of 1 Lemon

Preheat the oven to 350 degrees and prepare a bundt cake pan.

Dissolve the drink mix in the water.  Combine the lemonade mixture, cake mix, eggs, oil and lemon zest in a large bowl and mix at medium speed for about 2 minutes.  Pour batter into the prepared pan and place in the center of the oven.   Bake for 35 minutes or until a toothpick inserted into the center comes out clean.  Remove cake from the oven and cool completely.

When completely cooled, turn the cake out onto a serving plate.  Lightly dust the top with confectioners’ sugar.
