March 16th–Irish Coffee Cupcakes!!

Yes, even a non-coffee drinker like myself can create this cute little cupcake treat–even if I won’t eat it! I was going to make these for dessert for the adults at our St. Patrick’s Day dinner tomorrow night–the kids will eat the bunny rabbit cake over at the home page. To create this cute little cupcake simply remove the cupcake liner, 1/3 C Bailey’s Irish Cream liqueur (or more) and whisk it together with 2 tsp instant espresso powder. Pierce each cupcake several times with a fork and brush the liqueur mixture over each cupcake. Place in the bottom of an Irish Coffee mug. Top with whipped topping piped with a large star tip. At the tip place a chocolate-covered espresso bean. So Cute—So Festive–I’ll have to ask the adults how tasty it is…I’m having bunny rabbit cake with the kids!!
