My Famous Pina Colada Cake!!

You may have tried someone else’s Pina Colada cake, but I have never tried anything and came up with this yummy concoction all on my own. But hey, maybe more than one great mind thinks alike!!
Here’s what you’ll need:

First off, make your cake according to the box directions. This cake is made in layers–this cake today is a two layer, but I have made a three–and it’s just as good. After your two layers of cake have cooled, you are going to make a batch of stabilized whipped cream frosting. To do this you use:
1 pint Heavy Whipping Cream
1 tsp vanilla
4 TB powdered sugar
2 TB Wilton Piping Gel
Beat until it holds stiff peaks.
Take half of the whipped cream mixture and mix it with a 1/2 can of Bacardi Pina Colada Mix (frozen juice section). This is your filling.

Spoon over first layer of cake and spread to make smooth. Add the second layer of cake, and poke holes through the top.

Spread over the holes to fill them with the filling and remove excess filling back into the bowl.

Use the rest of the whipped cream to frost the top and sides of the cake. Dust with coconut. Sprinkle pineapple tidbits over the top.

Wrap the sides in parchment paper and put in the freezer until just before you are ready to eat it.

Another Purloined Post!!

The time has come yet again, to steal something from my favorite blog on the planet!! I know, between all of my blogs, you can honestly find something I’ve found over at Venomous Kate’s blog and had to steal. (VK–I hope you don’t mind, but honestly girl…you have amazing content!!) Whether it’s John McCain singing Babs, fun–time wasting political games…you name it…I’ve stolen it! And now I have found something for a cake blog (who’da’thunk)!
A few posts back I left the recipe for a family favorite, Dump cake, that my 10 year old makes all by himself. It is YUMMY! But today I found this recipe for Pumpkin Dump Cake. Anyone who knows me knows I LIVE for anything with Pumpkin in it. That means I have all of the ingredients in the pantry, which also means this cake will be made this evening and taken to the inlaws for dessert tomorrow. I can’t wait to taste it!
Pumpkin Dump Cake
Ingredients
1 29 oz. can pumpkin
1 12 oz. can evaporated milk
1 cup sugar
1/2 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
3 eggs
1 18 oz. box yellow cake mix
1 cup butter melted
Directions
1. Stir pumpkin, evaporated milk, sugar, spices and eggs together until thoroughly mixed.
2. Pour into a 8×14″ baking dish sprayed with Pam.
3. Sprinkle the cake mix evenly over the pumpkin mix in the pan. (You can use as little as half the box if you prefer.)
4. Gently spoon melted butter on top of everything.
5. Bake at 350 degrees for one hour or until it no longer wiggles in the middle.

Missing My Cakes!!

Are you as bored as I am with that Easter Basket cake over there in the right sidebar? Yes, it was the cake of the month in March, but I haven’t found anything inspiring to do for April–plus after the rush of Easter, I wasn’t really in the “Cake” mood! But that has changed! Today, I have been itching to try something fun and new.
Do you guys watch The Ace Of Cakes, with Duff Goldman?? The girls on that show are masters with piping. That is one area I’ve never excelled. I did find some of my favorite fonts on my photo editor and printed out page after page of the alphabet in each font. I’m going to put a plastic page over the printout and practice piping words. The other area that I want to learn is piping lace and stringing. So that will come soon too, but for the cake of the month, I want to make a Cinderella’s coach cake. You know with the ball pan! Cover it with white fondant and pearl dust to make it iridescent. I haven’t figured out what to create the the lower coach and wheels from for this cake, but when I do–you will see it over there in the cake of the month!!

The Guitar Cake!!

Ok—before you say anything let me just say…I know the arm of the guitar is too short–but honestly, the thing weighs 20 lbs–any more cake and I wouldn’t be able to lift it!! But other than the stubby little arm, I think it looks pretty darn good.
It is a carved Devils Food cake with a strawberry/cream filling frosted with chocolate frosting and covered with fondant. Since I’m not a fan of the flavor of fondant I like to put a lot of frosting underneath it so that people can peel the fondant off and still have the frosting with their cake.

A Wee Break!!

It’s been awhile since I posted over here. In fact, it’s become kind of outdated! Easter killed my love of cake for a bit–and I couldn’t think of anything fun to create for the month of April. That by no means means that I haven’t made cake–I created my own (fabulous) Pina Colada cake, and let me tell you it was To Die For! This weekend I do have an order for a birthday cake shaped like a guitar–so I will definitely post photo’s of that one.
While I was out shopping for silver pearl dust to use for the guitar strings I ran across this…

I couldn’t walk out of the store without it. Mind you, it’s red–and soooo perfect! But at $4.00 it was definitely coming home with me! It will go along the sink wall once I finish up the wallpaper removal and paint. But honestly, Cake Fixes Everything!!

Easter Spells C.A.K.E.S!!

For Easter I had nearly a dozen cakes to make and get out. Most of them were this cute little lamb for my husbands restaurant. They turned out pretty cute–but honestly, I’ve never frosted anything so easy. You bake the cake in a shaped pan—slather on frosting and shower him in coconut. Black jelly bean eyes and a pink jelly bean nose followed by a real ribbon bow. They turned out pretty cute!
Because I was rushed to meet my deadline, I did not snap a picture of any of the cakes that went out on Saturday, so these are from my husbands buffet. The person taking the pictures didn’t realize the camera was set to black and white–so all of my close ups are not in color–but there are some far shots that are.

The End Of An…Era??

Well, it’s over! Cupcake A Day that is! It actually only lasted 19 days, woo hoo! But with 12 cakes due on Saturday for Easter, and then Easter on Sunday…I missed two days of cupcakes! Yes, I’m sad, but I’m a little burned out. So I think we will stop for now, and kick it back into gear when life slows down again! Sound good??

A Family Favorite–Anyone Can Make!!

In the survey, I had a few people asking for cake’s that anyone could make whether or not they were decorated. So I thought I would share a recipe that my 10 year old makes. It’s a great confidence builder for kids–because they can do it from beginning to end, all by themselves. Mind you—I did put it in and take it out of the oven–but other than that, it’s all Jake.
Even better than him making it himself, it tastes AMAZING!! Definitely one of my favorite!
Dump Cake
1 can of Cherry Pie Filling
1 can of Crushed Pineapple
1 Yellow Cake Mix
1 bag of Coconut
1 stick of Melted Butter
Preheat oven to 350 degrees.
In an UNPREPARED 13×9 inch baking pan, dump the cherry pie filling and the undrained crushed pineapple. Spread around to mix the fruit. Sprinkle cake mix evenly over the fruit, and coconut over the cake mix. Drizzle melted butter evenly over the top.
Bake 40-50 minutes until the coconut looks toasty. Let cool for 15 minutes. Can be served topped with ice cream or whipping cream–or nothing at all!

Darn You Rubber Spatula!!

I remember when I was little and my mom or grandma would make a cake. Us three kids would circle and each would get a fabulous treat. Two got a beater each and the lucky one got to lick the bowl. YUM! Not long after this little tradition began, our poor little family finally got a rubber spatula. We HATED that thing! It could clean the bowl so well that there was literally nothing left to lick! Because it would leave one child out, my mom didn’t always clean the bowl as well as she could–or she would let the lone child without a beater lick the spatula. Good as it was, it was never the same!!

Tonight is the Pinewood Derby, and in case you haven’t noticed yet–if I’m going some where and I’m expected to bring a dessert—you get CAKE! So I’m making a sheet cake, carving it into a car (with spoiler) and piping the cub scout emblem on it–Oh, pictures will come! But being married to a Chef I’ve been filled in on all of the health risks associated with letting my kids lick the beaters, raw eggs and all. But today I thought, “What the heck!” It’s a fun childhood memory of mine, and I want them to have that too. And today, even I brought out the dreaded (but most helpful) rubber spatula—and since each of my little ones got the beaters…I got to lick the spatula clean!

March 19th–OH HAPPY DAY!!

Ok–totally lame, I know—but you have to realize! I had TWO pinewood derby cars to finish today with their wheels and weights. The oldest has never lost–he’s been the Grand Champion the previous two years. His little brother, this is his first pinewood derby and honestly, he’s expecting the same results as his brother. Unfortunately, there can only be one winner! On top of the two cars that are actually racing, I’m bringing a Derby Car Cake and that will take several hours. Then, Jake wants to bring a Dump Cake–so I have to help with that, get dinner on the table and four kids ready to go!
So you wonder why you are just getting a LAME old smiley face??? Well, the derby went great. The oldest now retires undefeated–yes, third year in a row he’s the grand champion. I must say…I make a MEAN derby car! As for my 8 year old, he came in 3rd overall. Why the difference? Grayson wanted his car just a little thicker than Jake’s–and that blew it for him. Live and learn right!! My derby cake went over racingly well–and the dump cake was a hit! So—–much time and energy spent—busy, busy day…but in the end everything (but the cupcake of the day) got finished! So, you get a lame smiley face!

March 18–Spring Flower!!

OK—I’m THRILLED about this cupcake! Not because it’s all that fabulous—but it is my FIRST ATTEMPT EVER at a Rose! Honestly—I don’t think it’s half bad! My next attempt will actually have 2 different colors of frosting in the bag for some depth–but for something that has always intimidated me…I’m quite impressed with just how easy it was! Hey…we’ll work on the leaves another day!

My Week In Cake!!

Who knew at the start of this little adventure in blogging that I would actually get paid a little to do it! This (the week before Easter) is a HUGE one! I Have a total of 9 cake orders due next Saturday. 1 for a lamb, 1 for the Cake of the Month and 7 more for either the lamb or the absolutely cutie pie bunny in the post below! Then this Wednesday is the Pinewood Derby and I thought I would make a sheet cake and carve it into a Derby car. We’ll see how much time is left between finishing the two derby cars that have to race on Wednesday, and Wednesday itself. Then Thursday morning life turns into Easter Cake Central!! Kind of fun!

March 16th–Irish Coffee Cupcakes!!

Yes, even a non-coffee drinker like myself can create this cute little cupcake treat–even if I won’t eat it! I was going to make these for dessert for the adults at our St. Patrick’s Day dinner tomorrow night–the kids will eat the bunny rabbit cake over at the home page. To create this cute little cupcake simply remove the cupcake liner, 1/3 C Bailey’s Irish Cream liqueur (or more) and whisk it together with 2 tsp instant espresso powder. Pierce each cupcake several times with a fork and brush the liqueur mixture over each cupcake. Place in the bottom of an Irish Coffee mug. Top with whipped topping piped with a large star tip. At the tip place a chocolate-covered espresso bean. So Cute—So Festive–I’ll have to ask the adults how tasty it is…I’m having bunny rabbit cake with the kids!!
